Ground spices, 4 young pigeons weighing about 2/3 lb., 1/4 lb. pigeon breast, 2/3 oz. foie gras, 1 teaspoon coriander, 1 star-shaped anise seed, 1 clove, 0.88 oz. pigeon foie gras, 1 teaspoon shallots, ½ oz. honey, 1 pint pigeon gravy, 1/4 lbs. wine vinegar, salt, pepper
1 – First Prepare pigeons for stuffing. For this chop pigeon breast and mix them with foie gras, shallot, pepper and salt. Now stuff this mixture into young pigeons. 2 – Now roast them for 8 minutes in oven. Then allow them to rest and cover them with a mixture of ground spices and honey. After this place them in oven. 3 – For preparing sauce, place little amount of honey in saucepan and mix vinegar to it. Caramelize and add ground spices to it and moisten up the gravy of pigeon. 4 – Cook it for 10 to 15 minutes and strain it. Then bind with butter. 4 – For preparing garnish, add 4 turnips, 4 carrots, 8 small onions, 2/3oz gourmand peas with greens. 5 – For serving the dish, place single young pigeon on every plate and pour little amount of sauce over and around them. Prepare a small vegetables pile while put the remaining sauce in serving bowl. Your dish is ready. Serve it with Crozes hermitage rouge for a dinner at home.
